A spring in our step

Spring is the season of hope and renewal… and, let’s face it, we need both more than ever right now!
As you can see from the images above, I’ve been chatting to a bunch of journalists recently - and writing the odd column - about how important these next few months are for the hospitality industry. I can’t tell you how excited I am about welcoming you back into Glass at the Hilton Sydney when it reopens, hopefully, mid next month (come on get those jabs, people!).
We’re planning a couple of big black tie gala events at Glass starting on October 20th because we need something to look forward to & everyone needs an excuse to dress up again! You can book tickets here. There really is a palpable sense of anticipation in the air in Sydney at the moment… it’s like those couple of weeks leading up to the 2000 Olympics!
I know it’s not just those of us in hospitality who are giddy with excitement about the promise of Spring… we all are. We’re all sick of Zoom chats, we’re all missing our friends and family and we’re all longing for things to get back to normal. After 18 months of lockdowns, closed borders and cancelled plans, I truly believe we have a real shot over the next few months to get our lives back on track.
I’ve teamed up with Tourism Australia for their latest campaign which is all about encouraging everyone to roll up their sleeves and get vaccinated. If the dozens of messages I receive every day from Aussies desperate to get back on a P&O Cruise and dine in one of our onboard restaurants are anything to go by… then, I think Australians are pretty much sold on the benefits of getting the jab. Now, let’s just get it done!
As I reflect on everything that’s happened these past couple of months - having to close the doors of my restaurant and instead spend much of my time baking and delivering pies to so many of your homes - I truly am excited for the future… but I am also exceptionally grateful. I’ve been truly blown away by your support for me and my staff during lockdown. You’ve kept us busy, you’ve kept us positive … and I hope, in return, we’ve kept your tummies full!
